As it gets hotter there is definitely a sense of urgency developing. There are tomatoes, corn, and green beans growing but not many. The Mizuna bolted and had to be pulled, the spinach started to bolt so I knew it was time to be done with it even though I may have been able to get another cutting from it. Today we froze all that remained, about 10lbs worth.
I need a table but for now I used my chick rearing tote for a washing table, the milk crate worked for the initial cleaning container. After washing and stemming all the spinach went in the bin, notice it is all in the shade, that isn’t just for me!
After was spinning, boiling for 2 minutes, ice bath while the next group was blanching, and then draining for vacuum sealing. I would prefer to can but my wife likes to freeze, most of my canning happens when she’s not home and she never knows. It’s not worth the argument but canning doesn’t require refrigeration and is more economical. I primarily prefer it because it doesn’t need electricity to keep or confined space, meaning freezers are limited in volume compared to the crawl space.
After words everything in the hoop house was turned except the lettuce.
